"Should Be Famous" Pot Roast


I thought the Crazy Kook's pulled pork was good, but this should be famous!

Ingredients
beef roast
Rub: cumin, paprika, salt and pepper

3 Tlb. olive oil
1 cooking onions chopped
4 cloves garlic minced
3 stalks of celery chopped
1/2 cups red wine or red wine/balsamic vinegar
2 cups stock
rosemary, thyme
1 can whole tomatoes
2 Tlb worcestershire sauce
mushrooms (optional and as many as you like)

mashed potatoes with roasted garlic with green onions for topping
baked acorn squash
roasted carrots

Directions




Rub roast with paprika, cumin, salt and pepper.

Add oil to heated pot. Use large pot with a lid.

Place roast in the pot and brown all sides.

Take out roast and place aside.




Add garlic, onion and celery to the oil and cook until caramelized. Deglaze pot with red wine or vinegar.

Place roast back in the pot.





Add the stock, can of tomatoes, rosemary sprigs and chopped thyme and worcestershire sauce.

Cook for 3 hours on stove element on medium heat in a covered pot or until fork tender.

For those of you wanting a delicious dinner when you get home from work, an alternative is prepare as above in slow cooker or crock pot and cook  on low heat all day.


 Voila! Enjoy! We served with roasted carrots, squash and garlic potatoes smuthered with the tomato beef sauce and topped with green onions.

Pumpernickel bread .......made in Bread Maker

I got this recipe from my brother.  Great dense rye bread!
You need a bread maker to knead.

Add ingredients in the order they are into the bread maker.

1 1/2 cup luke warm water
3 Tlb powder milk
2 Tlb shortening
2 Tlb honey
2 Tlb molasses
1 1/4 tsp salt
1 cup whole wheat flour
2 1/3 cup white flour
2/3 cup rye flour
2 Tlb cocoa
2 tsp instant coffee
1 1/4 tsp yeast

We like to use the dough cycle and then bake in the oven.

Grease pan, form bread and place on pan.  Cover with clean cloth and let it rise for 20 plus minutes.

You can brush with butter or egg for the glossy look or keep it matte.

Bake at 350 F for 20 - 30 minutes.

The way to tell if it is done, is to knock on the bottom and if it sounds hollow, it is done.  Yummy!

Easy to Make Bagels with a bread maker


I got this recipe from my brother and the first time I tried they turned out perfect! See below.  Now I did not have a bread maker -when all my family used one.  Now I wonder how I did without!



Ingredients

1cup warm water (around 70 degrees F)
1 1/2 tsp salt
2 Tlb sugar
3 c flour (can be 50-50 white and brown or just white)
2 1/2 tsp yeast

Types of Bagels
Topping-ie poppy seeds, onion flakes and toasted sesame seeds
Fillings -this you can add to the dough-cinnamon and raisins, cheese, and blueberries

Using a bread maker, add the ingredients in the order that they are listed.  If you are adding one of the fillings add now also.  Set bread maker to dough mode.  Shape bagels with your hands, cover and let rise for 10 minutes.

Put in boiling water for one minute-30 seconds each side. Roll in whatever type of bagel you would like to make.  We made poppy seed and onion flake bagels which were both fabulous!


Bake for 15 minutes at 400 degrees.



Yummy fresh homemade bagels.  What more could you ask for. Serve anyway you want with just butter, warm with cream cheese, lox and cream cheese or use as sandwhich.


Did you notice  NO FAT!





New variety sun dried tomatoes, olives and rosemary. I used stevia instead of sugar as well.
The rosemary was very good in bagels.

Vege BBQ Kabobs


On my birthday, we decided to have a winter BBQ!  


Wash and prepare an assortment of vegies such as  mushrooms, green and yellow peppers, cherry tomatoes and slices of white onion. 

Marinate in the following for about an hour:
fresh tyme 
3 parts olive oil
1 part red wine vinegar
1 tsp honey
4 garlic cloves chooped
salt and pepper

Add to skewers and barbaque till done.








Enjoy!  We served with steak, shrimp and baked potato with green onions and sour cream.  I did say it was my birthday right! 
However, the vegies were the best part and really all you need.

Greek Chicken Delight



I got the recipe from my sis but of course I altered it a bit!

Ingredients
6 chicken thighs- ideally boneless and skinless
salt and pepper
olive oil



1/2 cup chicken broth
1/4 cup olives -calabria is the best
1/2 to 1 tsp oregano
minced garlic
mushrooms, tomatoes, peppers and onion flakes (optional)
2 lemons






Heat olive oil in pan.  Sprinkle chicken with salt and pepper and add to heated oil.  If chicken has skin, put skin down.  Once chicken releases turn to brown both sides.











Make a sauce using chicken broth, oregano, olives, juice of one lemon and minced garlic.  We used 6 cloves.  Add vegetables of your choice.










We added one tomato chopped, a small piece of green pepper, one cooking onion, shiitake mushrooms, and onion flakes.   

The choice is yours.


Pour the sauce over the chicken.

And add the lemon slices on top. 

 Cover and cook.  You can cook this either in the oven for about 1 hour at 350 degrees or a crop pot 
all day on low 5-6 hours.  

Yummy!




 We served with spanish rice and greek salad and the flavour went really well together.
